Your rim will need a 4 1/2" back space. Your tires should not exceed 11.4" sidewall or section width when mounted on a 8" rim.
Anymore and you will be trimming the lip which I would recommend doing anyway for some added clearance, this is allowing for a straight car. I have seen were there is more clearance on one side of the car than the other, this needs to be checked before making a final decision is made on which size tires to run.
Good luck

My brother has a 1966 Coronet and we have just went through the same problem. I traded him my Crager street stars about a year ago for a R/C truck and he just put them on last month. They are 15x8, 4.5 back space with Dunlop 275/60-15. With the stock springs and shocks they rubbed bad. the lip is not where there gonna rub, problem is if your tires are inside the fender wells they will rub the body line that dips in. this is where his rubbed. With that being said last week we installed super stock springs and got the back end of the car up a little. we also cut the lips. I will take pictures tomorrow so you can see. Even with everything weve done theres not that much room for play. He's thinking of a tad smaller tire. I believe hes going to buy the Mickey sportsman S/R 28x10x15 with matching fronts. Like I said Ill post pics tomorrow.

I just mounted 15x7" Torque Thrust 2 wheels on my '67.  I used 215/65-15 tires and there is just room to pass your finger between the tire and lip of the wheel opening.

Hi!
I can see on the pics that it is not much or no room for the tire to the lip.
. I have TrustD 15-7 with 255-60 and they fits well on outside but i have more room in to the leaf
If you compare cragar ss with  trustD and both are 8 wide and have 4,5 backspace but it have different offset
Cragar -6,00mm
TrustD 0,00mm
does that mean should trustD fit better.
