Yes, but you will need to raise the compression somehow. The 340/360 heads have much larger chambers than the 318 heads. So that means either milling the heads a good bit or new pistons.

yes, but at around 68cc chambers the 340 heads will lower the 1972 318 comp. 8:1 ratio to 7 something = lame . if u do it use the thin head gasket. a stock 318 is 3.91" bore  +.060 is 3.97.  go to 4.00" IS COOL WITH CUSTOM pistons. or 4.030" but 4.04" on a 318 is overkill. I have a 1969 340 for sale.

so now i think im going to pull my 318 tear it down take the block to be bored .13 over to match the 340 bore (4.04) and since all the parts for the 340 i was building were rusty and the stroke is the same then im going to use the 318 crank and rods, they will hold up right or are the rods going to exsplode with the 340 pistons ha ha, not sure, does anyone know because i can use the 340 connecting rods but like i said there dirty and rather use something out of an engine that i new was running.

I'm not sure it'll bore that far. It might. Sonic check it like I said to be sure. I've bored some early 360s .125 over and still had room, but you never know. It's different block to block when you start talking about boring that far. What's wrong with the 340 that a sleeve won't fix?
