swapping a 360 from a 1978 motorhome into a 1965 sport fury. Both have 727 tranny. Should I use the 1978 torque convertor with the 1965 tranny or use the 1965 torque convertor?

I think you need to keep the converter with the engine.  The 360 is externally balanced, and AFAIK there are counterweights on the converter and/or flexplate. Will the newer converter fit the old trans? That I can't tell you.
