anyone out there in moparville know how big you can go with wheels & tires to fill out an Abody fish wheel well with pretty stock susp & brakes (9 in drums?)

Can I go 15 x 8 on 275/60/15s and still steer? how about 15x7 at 245/60/15? yes, I'm changing bolt pattern to 4.5.  What offset should be used?  I don't trust my own measuring techniques, especially up front.
