I am hoping to mixture I have is going to fit up.  Never delved this far into mods.  Wondering about the cam, how to rebuild the heads, port matching, and carb selection. And anything else I am not thinking of now.

I would stay away from the 360 heads. The big chamgers will kill your compression. Either use some 318 heads with a good valve job and some port work (302 casting would be best) or use a set of later Magnum heads and redrill them for the LA intake.

Use an Edelbrock 600 on the stock 340 intake, They are good street carbs and a small cam like a Comp Cams XE254

Yea if you run 360 heads on this thing have them milled .040 along with correcting the intake side then get a 2600 stall converter or at least a 3.91 gear or both.
Then skip the iron intake and sell it to someone doing a resto that needs it and get a rpm or performer[air speed in mind].
600 cfm carb of your choice.
PS If you go with the eddy 600 and a 340 cam or bigger you'll need to change to smaller primary rods and possibly 100 size jets. [done this before]

I drive a 1973 d100 full size regular cab every day (what fun would it be if it sat ?). This past fall I put 360 smog heads ,no mods , melling cam .429 intake, .444 exhaust . factory 318 four barrel intake , 750 afb , roller timing chain , summit headers.I have had no problems with this set up as a matter of fact I found a set of 302 casting heads at the scrap yard , small ports, small valves when did that ever build power , ok you get compression but the engine will lay down like a prom date . last week I smoked a new ford , he hung with me till 100 mph but thats only 4000 rmp with 3.55 gears. the cam is good for 5500 (340 spec) with out the bigger 360 heads you'll never get there. I ran a 500 cfm carb for a while  it gave a better pull down low. I plugged all my stats in to a pc dyno first= 293 horse 5000 & 331 torque at 4000, thats with 7.95 compression! if you going to have heads milled use 360 heads really any set will do.
