Looks like I got it solve. 18" fan, universal shroud all the way around, and a thermostatic clutch. Runs at 175 cruising, hasn't gone over 200 in stop and go traffic (downtown Chicago), and cools right down when I take off again. Thanks for all the advise.
Getting a compression test next week to figure out why I'm burning oil. Almost 1qt in 100 miles.
